Things to look at would be Wavelength Accuracy, Resolution, photometric accuracy and stray light which should all be done on a routine basis - you could ref the European Pharmacopoeia for details. This has a section relating to UV/VIs spectrophotometers.
A noise check is also advisable as it can affect measurements at both ends of the absorbance scale, affecting Limit of Detection at the low end and accuracy at high absorbance levels.
